【摘要】:Thistestmethodevaluatestheenergyconsumptionandcookingperformanceofoverfiredbroilers.Thefoodserviceoperatorcanusethisevaluationtoselectanoverfiredbroilerandunderstanditsperformanceandenergyconsumption.Thistestmethodisapplicabletogasandelectricuprightoverfiredbroilershavinginputratesgreaterthan60,000Btu/h(gasoverfiredbroilers)or10kW(electricoverfiredbroilers).Theoverfiredbroilercanbeevaluatedwithrespecttothefollowing(whereapplicable):Energyinputrate(see10.2),Temperatureuniformityofthebroilercavity(see10.3),Preheatenergyconsumptionandtime(see10.4),Pilotenergyrate(ifapplicable)(see10.5),Idleenergyrate(see10.6),andCookingenergyefficiencyandproductioncapacity(see10.7).Thevaluesstatedininch-poundunitsaretoberegardedasstandard.TheSIunitsgiveninparenthesesareforinformationonly.Thistestmethodmayinvolvehazardousmaterials,operations,andequipment.Thisstandarddoesnotpurporttoaddressallofthesafetyconcerns,ifany,associatedwithitsuse.Itistheresponsibilityoftheuserofthisstandardtoestablishappropriatesafetyandhealthpracticesanddeterminetheapplicabilityofregulatorylimitationspriortouse.
